Apple cinnamon oatmeal | Strudel style

You probably already know that I am a huge oatmeal lover.
Yet... I also adore cinnamon and apples, especially apple dessert such as the strudel. I don't know if you've ever heard about that. It's a typical dessert of central Europe, found in particular in Germany, Austria and northern Italy. It's a mix of sliced apples, cinnamon, pine nuts and raisins wrapped into a thin dough. Very delicious.
I couldnt' decide myself whether I preferred oatmeal, or strudel, for breakfast.
So I basically put the two things together: a strudel oatmeal!

INGREDIENTS
Serves: 2
120 gr / 1 ¾ cup rolled oats or pre-cooked
250 ml / 1 cups almond milk
90ml / 3 tbsp apple juice
1 medium size apple, finely sliced
1/2 tsp cinnamon powder
1/4 tsp salt
LET'S DO IT
Peel and finely slice the apple, then sauté it in a pan together with the pine nuts, the raisins and the cinnamon powder, until well golden.
Throw the rolled oats in a large saucepan or a pot, cover with milk, apple juice and a pinch of salt
Bring to the boil, stirring constantly to achieve a super super creamy consistency
Add half of the apple and cinnamon mix to the simmering oatmeal and finish cooking for the last 2 minutes
Serve your "strudel-style" oatmeal into 2 bowls and garnish with the rest of the apples and pine nuts.
Storage
This oatmeal keeps very well in the fridge in a glass container for up to 3 days. It'll thicken, so add some tbsp of water to thin it.
