Chocolate Cream Nutella Style | VEGAN | GF |

Updated: May 19

Vegan, sugar & gluten free, this homemade choco cream will be enjoyed by anyone in the family! And you'll need only 6 ingredients to make it!

Heyloooo!

I'm so excited to share with you this great recipe! I was so craving for something like this to spread on my homemade sodabread in the morning, but I didn't want to buy one of those already made chocolate cream, full of refined sugar, palm oil, and other junky ingredients.

So I found this recipe which I slighlty adapted to my personal taste.

This chocolate cream is perfect to spread on toast, bread slices or on pancakes for breakfast, but also to eat directly on the spoon (for the gourmands... as I do!).

This homemade Nutella is creamy, versatile, spreadable and simple to make. Plus, it is sugar free as it is sweetened only with few tablespoons of maple syrup, naturally vegan & gluten free so anyone will enjoy it!

How to make chocolate cream at home

The main thing to do is just pulsing all the ingredients in a food processor, except for the milk which will be added towards the end. You should be carefull to pulse some minutes at a time, so the cream and the blender won't be overheated.

What do we need to make homemade chocolate cream

  • Roasted hazelnuts: hazelnuts are the main ingredient of this recipe, so be aware that the greatest and highest quality of hazelnut, the greatest will be the result. They must be roasted for maximum flavor, so I strongly recommend to roast them 8-10 minutes in the oven before blending them. This will also help them to loose their oil faster when blending.

  • Cashew: soaked cashew overnight will add a special creamy texture, and the final flavor will not be altered;

  • Coconut oil: some oil part is required because, as you maybe already know, palm oil is the second Nutella ingredient (ouch, not healty at all). So, in order to make a Nutella-style cream, we will add some coconut oil which is healthier then palm one and it doesn't alter the flavor. Anyway, we will just add 3 tbsp of this, so not so bad;

  • Maple syrup: to sweeten our magic cream and give it the final touch;

  • Cocoa Powder: how could we make a chocolate cream without.... cocoa?!

  • Almond milk: to give the final texture result you want to get. The more milk you add, the creamier (and liquid... so be carefull) the cream will be. I personally like a firm and stiff Nutella, but I know many people would like it more liquid. It's up to you :)

INGREDIENTS

Serves: 1 glass jar

  • 150gr / 1 cup of roasted hazelnut;

  • 70gr / ½ cup cashew, soaked;

  • 3 tbsp Cocoa powder;

  • 3 tbsp Maple syrup;

  • 3 tbsp Coconut oil;

  • 80ml / ⅓ cup Almond milk.

LET'S DO IT
  1. Soak the cashew in warm water overnight;

  2. Preheat the oven to 375°F / 180°C and roast the hazelnuts for up to 10 minutes. Then let them cool down a little before blending;

  3. Drain the cashew and transfert them with the cooled hazelnut in a food processor. Start pulsing until you'll get a floury consistency, keep blending one minute at a time so the food processor won't be overheated;

  4. After 3-4 minutes, add the coconut oil, cocoa powder, the maple syrup and keep pulsing for other 2 minutes;

  5. You should now have a thick consistency, still a bit grainy. This is the time to add our almond milk;

  6. Blend and check after a while if you reached the consistency desired, silk and smooth. The amount of milk in this recipe will give you a stiff creamy nutella. The more milk, the more liquid nutella you'll get. So I recommand to add one tbsp at a time;

  7. Transfert to a clean jar for up to 2 weeks.

RICETTA IN ITALIANO

  • 150gr nocciole tostate;

  • 70gr anacardi ammollati;

  • 3 cucchiai di cacao amarao in polvere;

  • 3 cucchiai di sciroppo d'acero;

  • 3 cucchiai di olio di cocco;

  • 80ml latte di mandorla.

ISTRUZIONI
  1. Metti gli anacardi ad ammollare in acqua tiepida per tutta la notte;

  2. Preriscalda il forno a 180 ° C e fai tostare le nocciole per una decina di 10 minuti. Quindi lasciale raffreddare un po' prima di frullarle;

  3. Scola gli anacardi e trasferiscili in un robot da cucina o un frullatore potente insieme alle nocciole. Inizia a frullare un po' per volta, fino ad ottenere una consistenza farinosa. Continua a frullare un minuto alla volta in modo che il robot da cucina non si surriscaldi;

  4. Dopo 3-4 minuti, aggiungi l'olio di cocco, il cacao in polvere, lo sciroppo d'acero e continua a frullare per altri 2 minuti;

  5. Ora dovresti avere una consistenza piuttosto densa, ma ancora un po 'granulosa. Questo è il momento di aggiungere il latte di mandorle;

  6. Frulla e controlla ogni tanto se hai raggiunto la consistenza desiderata, setosa e liscia. La quantità di latte in questa ricetta ti darà una nutella cremosa e soda. Più latte aggiungerai, più la nutella sarà liquida. Quindi mi raccomando, aggiungi soltanto un cucchiaio alla volta;

  7. Trasferisci la crema in un vasetto di vetro pulito per un massimo di 2 settimane.
