Vegan biscuits "Baci di Dama" recipe

Baci di Dama (literally "The Lady's kisses) are typical italian cookies: two almond biscuits are kissed one another with a layer of chocolate cream. Sounds tasty, doesn't it?


Perfect for a mid-morning snack, to accompany a good espress, or to bring as a gift to a friend for an afternoon tea.


Baci di Dama are small sweet delicious cookies, but be careful: they're addictive and one leads to another! :)


Vegan Baci di Dama recipe


Vegan option is possible, and today I'm gonna show you my recipes for these sweet treats. Simply irresistible. Plus, they're absolute "Husband approved"! ;)


The main ingredient of this recipe is almond flour. If you don't have it or, just like in my case, have difficulty in finding it at the grocery store, you can easily blend almonds with a food processor, some at a time, and pulse until you reach a flour-like consistency.


How to make Vegan Baci di Dama


  • First, mix all the dry ingredients in a bowl and then add the oil and water. The percentage of liquid elements among the ingredients is low, this is because the biscuits will have to be crunchy and must not deform during cooking. Therefore the dough may seem hard and crumbling at the beginning but be patient: keep kneading until in the end you will get a homogeneous dough.

  • Once the dough is done, it is good to let it rest in the fridge for an hour so that it becomes firmer, it will be easier after handling it to form the small balls.

  • The shape: since the biscuits will be paired, they must have a round shape, but flat on one side. For convenience, I first created the balls, which I then cut with a sharp knife and finished the shape before placing them on the pan.

  • The filling is made with a chocolate cream. You can buy a ready-made one or, as I did, heat a few cubes of dark chocolate in bain-marie together with two tablespoons of almond milk, mix well once melted, and spread it between the two biscuits.

INGREDIENTS
  • 100 gr / ¾ cup all purpose flour;

  • 100 gr / 1 cup almond flour;

  • 60 gr / ⅓ cup unrefined brown sugar;

  • 1 tbsp cornstarch;

  • Pinch of salt;

  • 60 gr / ⅓ cup cup sunflowerseed oil;

  • 40 ml / 3 tbsp water;

  • 50 g dark chocolate + tbsp almond milk (or other plant based milk)


LET'S DO IT

  1. In a bowl, combine the white flour, almond flour, corn starch, brown sugar and salt. Mix all the dry ingredients until fully combined, then add the sunflowerseed oil. Knead with your hands, when the oil is absorbed, pour in the water. Knead again until you get a loaf. Wrap it in a film sheet and let it rest for 1 hour in the fridge;

  2. Preheat the oven to 375°F / 180 °C;

  3. Line a baking tray with parchment paper, and form small dough balls of 1,5-2cm diameter. With the help of a sharp knife, cut them in half, so every piece will have a flat side;

  4. Bake for 20 minutes, flat side down, then transfer on a rack to allow them cool completely;

  5. While the cookies are cooling, melt the chocolate in bain-marie with 2 tbsp of almond milk. The consistency must be creamy, not fluid;

  6. Take a biscuit and dip the flat part in the melted chocolate. Pair it with the second biscuit and place the paired cookies back on the rack and let them rest until the chocolate has solidified and the two halves are attached;

  7. Serve with coffee or tea. Enjoy!

Storage

Vegan Baci di Dama can be store in a biscuit container for up to 5 days. Anyway, I assure you they won't last so long ;)

A chi non piaccioni i Baci di dama? Questi piccoli biscottini accoppiati tra loro da una golosa crema al cioccolato sono davvero irresistibili. Perfetti per uno snack al volo a metà mattina, oppure per accompagnare un buon caffè, o ancora da portare in regalo ad un'amica per il tè de pomeriggio.


La mia versione Vegan comprende farina di mandorle e zucchero integrale, pertanto il risultato finale sarà esteticamente più scuro rispetto ai classici biscotti chiari ai quali i più sono abituati. Ma non diffidate: il risultato è ottimo, friabilissimo, una bomba di gusto in cui mandorle e cioccolato si sposano alla perfezione. Dai, facciamoli insieme!


INGREDIENTI

ISTRUZIONI
  1. In una ciotola, mescola insieme gli ingredienti secchi, quindi le due farine, lo zucchero, l'amido di mais e il sale. Mescola bene finché le polveri saranno ben amalgamate, poi aggiungi l'olio e l'acqua. Impasta fino ad ottenere un panetto che avvolgerai nella pellicola e farai riposare in frigo per un'ora;

  2. Al termine del tempo di riposo, preriscalda il forno a 180°C;

  3. Rivesti una teglia con della carta forno, e forma delle palline del diametro di 1.5-2cm. Con l'aiuto di un coltello affilato, taglia ogni pallina a metà, di modo che ogni pezzo avrà un lato piatto;

  4. Appoggiali sulla teglia con il lato piatto verso il basso, ed inforna per 20 minuti. Una volta cotti, trasferiscili su una gratella per dolci e lasciali raffreddare;

  5. Mentre si raffreddano, sciogli il cioccolato a bagnomaria insieme ai due cucchiai di latte. La consistenza dovrà essere cremosa, come una cioccolata spalmabile;

  6. Prendi ogni metà biscotto, intingilo nel cioccolato fuso, oppure aiutati con un cucchiaino, quindi accoppia ogni metà per formare il classico Bacio di Dama. Lasciali solidificare;

  7. Gustali con tè o caffè.
