Vegan Cauliflower Bites | 6 ingredients

These vegan caulifower and potatoes bites are perfect for an appetizer or a tasty side for your dinner, made with only 5 ingredients!
Everybody knows how versatile cauliflower can be. You can make cauliflower rice, stews or soup with it, but even cauliflower steaks! Today I want to show you this easy but so delicious recipe. It is made with few ingredients so it's essential that the veggies are fresh and seasonale for maximum flavor.
These Vegan Cauliflower bites go heavenly well with plant based mayonnaise or the ranch sauce.
I found this to be a perfect appetizer or a nice idea for side dishes.
How to make vegan cauliflower bites
To make these delicious bites, you'll need to previously pre-cook your veggies.
I prefer to steam the cauliflower and the potatoes so all the ingredients keep their nutritional values, because if you boiled them, most of the vitamines and minerals would be destroyed and scattered in the cooking water.
So steam the veggies for about 14-15 minutes until slighty tender, not too soft, wait for them to cool down a little, and the blend with the rest of the ingredients.
Form small bites of about 2,5 cm of diameter and bake for 20 minutes until slighty brown.
Buffalo cauliflower bites suggestion
This recipe is fairly easy to make because it doesn't require many ingredients. But, whether you are looking for a stronger flavor, you can transform these bites into a Buffalo version, just by adding these other ingredients to the basic recipe:
½ cup all-purpose flour (45 g)
½ tsp paprika
1 tsp garlic powder
½ teaspoon pepper
2 tbsp buffalo sauce or hot sauce (35 g)
1 tbsp maple syrup or other liquid sweetener of your choice
Whisk the Buffalo sauce ingredients all together before blending them with the veggies. If the batter is too soft to form the bites, add some more flour or bread crumbs in order to get a spoonable consistency.
250 gr / 8.8 oz cauliflower;
350 gr / 12.3 oz potatoes;
1 leak - the white part;
3 tbsp breadcrumbs;
½ tsp grounded nutmeg;
2 tbsp lemon juice;
Pinch of salt.
Chop the vegetables into medium size pieces;
Steam the vegetables for 14-15 minutes until tender but not too soft;
In the meanwhile, finely chop the leak and sauté in a pan with a little olive oil and a pinch of salt, until translucent;
Pre-heat the oven to 180°C / 375°F;
Combined all the ingredient in a food processor and start blending. The result will be a fairly homogeneous and workable dough. Adjust with salt and, if necessary, some more breadcrumbs to dry;
With humid hands, form small bites of a diameter of 2.5 cm and place them on a baking sheet covered with parchment paper. Bake in preheated oven for about 15-20 minutes taking care to turn them halfway cooking.
