Vegan Chocolate Granola Recipe | Oil free + GF

Granola.... how much I love you!
Perfect for breakfast, middle morning break, afternoon snack, a snack on the go, even after dinner to munch in front of tv. I mean... granola is adorable, and so tasty.


I enjoy my chocolate granola on top of non-dairy yogurt, almon milk, with peanut butter, on porridge for breakfast, or simply by the handful!
The possibilities are endless. Plus, homemade granola is so much healthier then the ones bought in the stores, cause typically those are packed with refined sugar or other kinds of chemical sweeteners to make it more appetizing. But homemade granola is not only healthier, it's even tastier, because you can make it with what you love most, being chocolate chips, coconut flakes, maple syrup, cinnamon, pecan, walnuts... Plus, granola makes your house smell amazing... I mean...

My homemade granola is oil, refined sugar and gluten free. Plus, is so easy to make!
To make my vegan chocolate granola recipe, it won't take you more then 10 minutes of prep time. And as just said, it is refined sugar free, oil free and also GF. So it is good for you!
I've been making granola many times in my life and I've come up with this formula which I consider pretty much like the best I've ever make. So feel free to customize it with any types of seeds/nuts you like, but try to keep the same ratio of oats and liquids.

How to make granola | Tips
Toss all the dry and liquidi ingredients all together in a bowl with your hand like you were "squeezing" them. This will help the oats and nuts to evenly absorb the syrup;
Press firmly the granola on the tray before baking for larger clusters;
Flip/toss the granola when half cooked.

INGREDIENTS
300 gr / 3 ⅓ cups gluten free rolled oats
150 gr / ½ cup maple syrup (or another liquid sweetener of choice)
60 gr / ¼ cup dates
40 gr / 1.4 oz chocolate chips
30 gr / 1 oz puffed rice
70 gr / 2.45 oz walnuts
40 gr / 1.4 oz pistachios
40 gr / 1.4 oz pecans
3 tbsp mix of seeds (I used pumpkin, sunflower and sesame seeds)
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
LET'S DO IT
Preheat the oven to 180 °C / 375 °F
Place the dates in a food processor and blend until you get small pieces. Set aside
Coarsely chopped the walnuts, pistachios and pecan
In a big bowl, whisk together the maple syrup, vanilla extract, pinch of salt and cinnamon until well combined. Then add to this mix the rest of the ingredients: rolled oats, dates, chocolate chips, puffed rice, seeds and chopped nutty mix
With your hand, squeeze all together in order to make all pieces evenly coated
Transfer the mix in a baking tray, firmly press the granola and bake for 20 minutes
After 20 minutes, flip and toss the granola with a spatula and bake for other 10 minutes
Let it cool completely before removing from the tray


How to store Granola
You can keep your granola in a glass jar or glass container up to one month.
