Vegan strawberry porridge | 5 ingredients

Hello there!

Spring has now begun, and the first baskets of strawberries are beginning to appear on the shelves of supermarkets. Just yesterday I was shopping in my town and I came across these fruits so red, sweet and juicy, that I couldn't resist and had to buy two baskets. I have to tell you that I am a great porridge lover, I just adore it in all its forms. from the most classic, to the one with the chopped chocolate inside, or dried fruit, jam, cinnamon ... But I hadn't tried a version with strawberries yet. So here is the idea of ​​blending a part of them in some plant based milk to create an amazing strawberry milk, which will also color our porrdige with a pleasant shade of pink. It is a fun version of the classic porridge, which will appeal to even the little ones.




You can prepare it the night before and warm it up in the morning with a little water, otherwise do it directly as soon as you get up if you have some time. Either way, it won't take you more than 20 minutes in total if you use pre-cooked flakes like me. I like their creamy consistency, but if you have normal oat flakes they will work perfectly fine anyway. Just know that the cooking times may be a little longer.


Should you double quantities, don't forget to close it in an airtight jar and keep it in the refrigerator for up to 3 days.


INGREDIENTS

Serving: 2 persons


  • 250gr / 8.3 oz strawberry

  • 50ml / 3 tbsp water

  • 250ml / 1 cup plant based milk (I used oat milk)

  • 120gr / 1 ¾ cup rolled oats or pre-cooked

  • A pinch of salt

  • 1 tsp vanilla extract

  • 1 tbsp agave syrup or maple syrup



LET'S DO IT

  1. First of all, remove the top part from the strawberries and cut them into strips

  2. Blend half the strawberries in a mug with milk and water for a few seconds until well combined. You will get a nice pink drink. For a stronger flavour, replace water with some more milk

  3. Throw the oats in a large saucepan or a pot, cover the strawberry milk, a spoonful of agave syrup, the vanilla extract and the pinch of salt. You can use the maple syrup if you wish, it won't make much difference

  4. Bring to the boil, stirring constantly to achieve a super super creamy consistency

  5. As soon as it starts boiling, add the rest of the strawberries and finish cooking for the last 2 minutes. Do not overcook the strawberries otherwise they will get mushy and you will no longer feel them under your teeth.


Serve your strawberry oatmeal into bowls with some fresh strawberry and a drizzle of some other agave syrup.
